(Greek Sesame Bread Rings)
Crisp on the outside, chewy on the inside, and generously coated with sesame seeds โ Koulouri Thessalonikis is a classic Greek street bread enjoyed any time of day. Simple ingredients, big flavor!
๐งพ Ingredients
400 g all-purpose flour
7 g dry yeast
250 ml warm water
1 tbsp sugar
1 tbsp olive oil
ยฝ tsp salt
50 g sesame seeds
๐ฉโ๐ณ Instructions
Activate the yeast:
Mix warm water with sugar and yeast. Let sit for 10 minutes until foamy.
Make the dough:
Add flour, salt, and olive oil. Knead for 8โ10 minutes until smooth and elastic.
First rise:
Cover and let the dough rise for 1 hour, until doubled in size.
Shape:
Divide dough into 6 pieces. Roll each into a rope and form a ring.
Sesame coating:
Dip each ring briefly in water, then roll generously in sesame seeds.
Second rise:
Place on a baking sheet and let rise for 20 minutes.
Bake:
Bake at 200ยฐC (400ยฐF) for 15โ18 minutes until golden brown.

For extra crunch, toast the sesame seeds lightly before coating.
