These cookies are buttery, soft, and melt-in-your-mouth delicious with a festive holiday twist.
Ingredients:
1 box (about 15–18 oz) yellow cake mix
1 package (8 oz) cream cheese, softened
½ cup (1 stick) unsalted butter, softened
1 large egg
1 tsp vanilla extract
1 cup powdered sugar (for rolling)
Holiday sprinkles or colored sugar (red, green, gold)
Instructions:
- In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
- Add the egg and vanilla, mix well.
- Slowly add the cake mix and mix until fully combined (dough will be sticky).
- Cover the bowl with plastic wrap and chill for at least 30 minutes (this makes the dough easier to handle).
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop about 1 tablespoon of dough, roll into a ball, then roll in powdered sugar until fully coated.
- Place balls on baking sheet (about 2 inches apart).
- Bake for 10–12 minutes, until the edges are set but the centers are still soft (do not overbake!).
- While still warm, sprinkle with festive holiday sprinkles or colored sugar for a Christmas touch.
- Let cool on the sheet for 2–3 minutes, then transfer to a wire rack. Tips:
For extra Christmas cheer, mix some red and green sprinkles directly into the dough before baking.
Store cookies in an airtight container at room temperature for up to 5 days.
