Ingredients:
For the Chicken Kabobs:
1½ lbs boneless, skinless chicken breasts, cut into 1½-inch cubes
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper, to taste
Skewers (metal or soaked bamboo)
For the Bang Bang Sauce:
½ cup mayonnaise
¼ cup Thai sweet chili sauce
1 tablespoon sriracha (adjust to heat preference)
1 tablespoon honey
1 tablespoon lime juice
Optional Garnishes:
Chopped fresh cilantro
Lime wedges
Extra sauce for dipping
Directions:
Preheat grill or grill pan over medium-high heat.
In a large bowl, toss chicken pieces with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
Thread chicken onto skewers, spacing evenly.
Grill chicken skewers for 10–12 minutes, turning occasionally, until golden and cooked through.
While chicken grills, whisk together all bang bang sauce ingredients in a bowl until smooth.
Brush kabobs with bang bang sauce in the last 2 minutes of grilling for a caramelized finish.
Remove from grill, garnish with cilantro and lime wedges. Serve with extra sauce on the side.
