Ingredients
For the Chicken:
2 large chicken breasts, sliced in half (to make 4 thinner pieces)
1 tsp salt
½ tsp black pepper
½ tsp paprika
2 tbsp olive oil
4 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
½ cup Parmesan cheese, grated
1 tbsp butter
1 tsp dried Italian seasoning
1 tbsp fresh parsley, chopped (for garnish)
For the Mashed Potatoes:
4 large russet potatoes, peeled and cubed
4 tbsp butter
½ cup milk (or heavy cream for extra richness)
½ tsp salt (or to taste)
¼ tsp black pepper
¼ cup Parmesan cheese (optional, for extra flavor)
Directions
- Make the Mashed Potatoes
Boil potatoes in salted water for 15-20 minutes until fork-tender.
Drain and mash with butter, milk, salt, pepper, and Parmesan (if using). Keep warm.
- Cook the Chicken
Season chicken breasts with salt, pepper, and paprika.
Heat olive oil in a large skillet over medium-high heat.
Sear the chicken 3-4 minutes per side until golden brown. Remove from skillet and set aside.
- Make the Creamy Garlic Sauce
In the same skillet, melt butter and sauté garlic until fragrant (30 seconds).
Add chicken broth and scrape up any browned bits.
Stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer for 2-3 minutes until thickened.
- Combine & Serve
Return chicken to the skillet and let it simmer in the sauce for 5 minutes, until heated through.
Serve over mashed potatoes, spooning extra sauce on top.
Garnish with fresh parsley and enjoy!
