Ingredients:
2 cups cooked and shredded chicken
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1 chopped tomato (optional)
1 tablespoon chopped parsley or cilantro
1 teaspoon paprika
1 teaspoon garlic powder
Salt and pepper to taste
6–8 tortilla wraps
2 tablespoons butter or oil for frying
For the topping:
1/2 cup shredded mozzarella cheese
A sprinkle of cilantro or parsley
Instructions:
- Make the filling
Mix the chicken with the mozzarella, cheddar, tomato, parsley, paprika, garlic powder, salt, and pepper well.
- Fill and roll
Place two tablespoons of the filling inside each tortilla wrap.
Roll it up tightly.
- Cook
Heat a skillet with a little butter or oil. Toast the tortillas on all sides until golden and crispy.
- Add the cheese and melt it.
Place the tortillas in a baking dish.
Sprinkle the mozzarella cheese on top.
Bake in a preheated oven (200°C/400°F) for only 5–7 minutes, or until the cheese is melted.

Garnish with parsley and serve hot with:
