Ingredients
Chicken
- 400 g chicken breast, cubed
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano
- ½ tsp garlic powder
- Salt & pepper
- Optional: splash of lemon juice
Brown Rice
- 150 g (¾ cup) brown rice
- Salt
- 1 tsp parsley
Cucumber-Tomato Salad
- ½ cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ red onion, finely chopped
- 1 tbsp olive oil
- 1 tsp lemon juice or vinegar
- Salt & pepper
- Parsley
Tzatziki
- 150 g Greek yogurt
- ¼ cucumber, grated and squeezed
- 1 garlic clove, minced
- 1 tsp lemon juice
- 1 tbsp olive oil
- 1 tsp dill
- Salt & pepper
Instructions
- Cook Rice: Boil brown rice in salted water for 25–30 minutes. Fluff and add parsley.
- Cook Chicken: Marinate chicken with olive oil, spices, and lemon. Cook in a hot skillet 8–10 minutes until golden.
- Make Salad: Mix cucumber, tomatoes, onion, olive oil, lemon, salt, pepper, and parsley.
- Make Tzatziki: Combine yogurt, cucumber, garlic, lemon, olive oil, dill, salt, and pepper.
- Assemble: Add rice to bowls, top with chicken, salad, and a spoon of tzatziki. Garnish with parsley.
