Ingredients
For the Chicken
- 2 chicken breasts
- Juice + zest of 1 lemon
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp oregano
- Salt & black pepper, to taste
For the Veggies
- Zucchini, sliced
- Bell peppers, sliced
- Salt & pepper
- Drizzle of olive oil (optional)
Instructions
1. Marinate the Chicken
- In a bowl, whisk together lemon juice, lemon zest, olive oil, garlic, oregano, salt, and pepper.
- Add chicken breasts and coat well.
- Marinate for 30 minutes (or up to 2 hours for more flavor).
2. Grill the Chicken
- Preheat your grill or grill pan over medium-high heat.
- Grill chicken for 5–7 minutes per side, or until fully cooked and nicely charred.
- Let rest for 5 minutes before slicing.
3. Grill the Veggies
- Lightly season sliced zucchini and bell peppers with salt, pepper, and a drizzle of olive oil.
- Grill for 3–5 minutes per side until tender with a light char.
4. Serve
- Plate the sliced grilled chicken alongside the vegetables.
- Add extra lemon zest or a squeeze of fresh lemon if desired.
