    Ingredients:

    Base:

    2 tbsp butter

    2 tbsp all-purpose flour

    1 cup milk

    3 large eggs, separated

    1/4 cup sugar

    Pinch of salt

    For Vanilla Soufflé:

    1 tsp vanilla extract

    For Chocolate Soufflé:

    1/2 cup melted dark chocolate

    Recipe:

    Prepare the ramekins:
    Grease the ramekins with butter and dust them with sugar. Preheat the oven to 200°C (390°F).

    Make the soufflé base:
    Melt the butter over medium heat, add the flour, and stir for one minute.

    Gradually pour in the milk, stirring until the mixture thickens.

    Remove from the heat and let it cool for one minute.

    Add the egg yolks:
    Add the egg yolks one at a time.

    For the vanilla: Add the vanilla.

    For the chocolate: Add the melted chocolate and stir.

    Whisk the egg whites: Whisk the egg whites with a pinch of salt until frothy, then gradually add the sugar until stiff peaks form.

    Combine the mixtures: Gently fold in one-third of the egg white mixture, then fold in the remaining mixture.

    Baking: Fill the ramekins almost to the top.

    Bake for 12–15 minutes, or until the soufflés have risen, without opening the oven door.

    Serving: Serve immediately with powdered sugar, whipped cream, or chocolate sauce.

    Ingredients:

    2 tbsp oil

    1 small onion, diced

    3 garlic cloves, minced

    2 cups cooked shredded chicken (optional)

    1 cup salsa verde (store-bought or homemade)

    4 cups chicken broth

    1 cup small pasta (shells or elbow)

    1 cup canned white beans, drained

    1 small can diced green chilies

    ½ tsp cumin

    ½ tsp oregano

    Salt and pepper to taste

    Fresh cilantro and lime for serving

    Recipe:

    Heat the oil in a saucepan. Add the onion and sauté until softened.

    Add the garlic and cook for 1 minute.

    Add the chicken, if using, and cook briefly.

    Pour in the salsa verde and chicken broth, and stir until well combined. Add the small pasta and cook for about 10 minutes.

    Add the white beans, canned green peppers, and seasonings: cumin, oregano, salt, and pepper.

    Simmer for an additional 5 minutes to allow the flavors to meld.

    Serve with fresh cilantro and a squeeze of lemon.

    Tzatziki

    • 150 g Greek yogurt
    • ¼ cucumber, grated and squeezed

    • 1 tbsp olive oil
    • 1 tsp dill

    Instructions

    1. Cook Rice: Boil brown rice in salted water for 25–30 minutes. Fluff and add parsley.
    2. Cook Chicken: Marinate chicken with olive oil, spices, and lemon. Cook in a hot skillet 8–10 minutes until golden.
    3. Make Salad: Mix cucumber, tomatoes, onion, olive oil, lemon, salt, pepper, and parsley.
    4. Make Tzatziki: Combine yogurt, cucumber, garlic, lemon, olive oil, dill, salt, and pepper.
    5. Assemble: Add rice to bowls, top with chicken, salad, and a spoon of tzatziki. Garnish with parsley.

    1 tbsp orange blossom water or milk

    Preparation

    1. In a large bowl, mix flour, baking powder, salt, and sugar.
    2. Add softened butter and oil. Rub with your fingers until the mixture looks like coarse crumbs.
    3. Add vanilla and milk gradually, mixing until a soft, smooth dough forms. If it is too dry, add a little more milk. Cover and let rest for 20–30 minutes.
    4. For the filling, combine date paste, melted butter, cinnamon, cardamom, and orange blossom water. Knead until smooth and not sticky. Form into thin ropes.

    2 medium apples, finely grated or chopped

    2 eggs

    1 cup sugar

    1 cup milk

    ½ cup oil

    1 cup unsweetened cocoa powder

    1 cup flour

    1 packet baking powder (10g)

    1 teaspoon vanilla extract

    Instructions:

    Mix the eggs and sugar well until the mixture becomes light and fluffy.

    Add the milk, oil, and vanilla extract, and continue mixing.

    Add the grated apples and mix until combined.

    Add the cocoa powder, then the flour mixed with the baking powder, and gently fold until you have a smooth batter.

    Pour the batter into a greased or lined baking pan.

    Bake in a preheated oven at 170°C (340°F) for 35–40 minutes (depending on your oven).

    Once it comes out of the oven, you can brush the top with a little melted chocolate to achieve the shine shown in the picture.

    1. Sear the Steak
