Directions:
- In a blender, combine:
1 cup rolled oats
¾ cup milk (any kind)
1 ripe peach, diced
1 ripe banana
2 eggs
½ tsp cinnamon
1 tsp baking powder
1 tsp vanilla extract
Pinch of salt
- Blend until smooth and well combined.
Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
- Pour about ¼ cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook the other side for 2–3 minutes or until golden.
Serve warm with fresh peach slices or your favorite toppings.
Tip:
If the batter feels too thick, add a splash of milk to loosen it.
